- For the Crispy Chicken: 2 large chicken breasts, 1 cup flour, 2 eggs, 1 cup panko breadcrumbs, 1/2 cup Parmesan cheese, 1 tsp dried oregano, 1/2 tsp garlic powder, salt, black pepper, and 1/3 cup olive oil for frying.
- For the Pasta: 12 oz short pasta (penne, fusilli, or rigatoni), 1 tbsp olive oil, and salt for the water.
- For the Greek Salad Mix: 1 cup cherry tomatoes, 1 cup cucumber, 1/2 cup red onion, 1/2 cup Kalamata olives, 1/2 cup crumbled feta, and 1/4 cup fresh parsley.
- For the Dressing: 3 tbsp extra virgin olive oil, 1 tbsp red wine vinegar, 1 tsp dried oregano, 1 minced garlic clove, salt, and black pepper.
Instructions
- 1. Prepare the Crispy Chicken
- Slice chicken into bite-sized pieces. Prepare three bowls: one with flour; one with beaten eggs; and one with panko, Parmesan, oregano, garlic powder, salt, and pepper. Dredge chicken in flour, then egg, then panko. Fry in olive oil over medium-high heat for 3–4 minutes per side until golden. Drain on paper towels.
- 2. Cook the Pasta
- Cook the short pasta in a large pot of salted water according to package directions until al dente. Drain and toss with 1 tbsp olive oil to prevent sticking.
- 3. Make the Salad and Dressing
- In a large bowl, combine the tomatoes, cucumber, red onion, olives, feta, and parsley. Whisk together the dressing ingredients (olive oil, vinegar, oregano, garlic, salt, and pepper) and pour over the salad mixture.
- 4. Assemble the Dish
- In a large serving bowl, combine the cooked pasta with the Greek salad mixture. Toss well to coat. Top with the crispy chicken bites, garnish with extra herbs if desired, and serve immediately.
Zusatztipps für die Zubereitung
For an extra crunch with less oil, you can bake the chicken bites in a preheated oven at 425°F (220°C) for 18–20 minutes, making sure to flip them halfway through the cooking time.
